Mariachi Chicken

This simple recipe looks great when you are done and tastes even better than it looks!





I am adding the nutrition info as several people have commented that they appreciate that when it is available.



Preheat your oven to 350 degrees and lets start gathering some ingredients. This recipe will serve 2.




Some salsa verde and some sour cream or plain yogurt. I almost always substitute yogurt for sour cream, because I always have it on hand.




Some Neufchatel or Cream Cheese. Neufchatel is a lower fat alternative if you can find it and has almost the same taste as cream cheese. Some carrots, green onion and butter.




Some chicken and some wheat crackers. I just used wheat thins. You also need some parsley and garlic powder, but that didn't make it to the photo shoot.

Lets get prepping!




Chop the green onion.




Chop the parsley. (you can substitute with dry) Grate the carrot also.




Put the wheat crackers in a bag and smash them up. I just used my rubber mallet for this.




Put the chicken in some plastic and give it a good beating as well. You want it to be about 1/4 inch thick.




Combine the cheese, carrot, onion, and some garlic powder in a bowl.




Resist the temptation of taking the bowl into the TV room and consuming it with the rest of the wheat thins.




Instead smear it on the flattened chicken.




Zap the butter in the microwave on defrost for about 30 seconds to melt it and then get to rolling up your chicken.




Roll it from the smallest end to the widest end and secure it with toothpicks. Brush it with the butter.




Send it for a roll in the wheat crackers to get it coated.




Pop it into a greased casserole and get it in the oven for about 30-35 minutes.




The wheat crackers end up a gorgeous golden brown.




Top it with the green salsa and the yogurt or sour cream. I served it with some dirty rice (from a box, food police!!)




This was simple but looks very elegant. This would be a great date night meal. If your date ate chicken. Or cream cheese. Or rice. ANYWAY, maybe YOU can find a date who will, but for now, I am dining alone!!

  7. Very enticing that is! Its perfect for us dine alone people too, with just two servings. One for today and one for tomorrow! (Yes, I can easily eat the same thing two days in a row, can you?) lol

  11. I've been a secret blog reader for a long time now. I love reading about what your cooking. I FINALLY decide to cook something, this was it. Huge hit with my hubby. I used triscuit instead of wheat thins... came out great!
