Chicken Thighs with Artichoke Orzo from Everyday with Rachael Ray

I am coming back with more Chicken Thighs because I love them! Even I get into the habit of cooking with the same things over and over, so I promise to be introducing some new ingredients soon but this meal is delicious!! I adore Orzo pasta, if you have not cooked with it before PLEASE give at least the side dish a try. It is rice shaped pasta that cooks up to a delicious and creamy texture, almost like risotto.

Get some water boiling, salt the water to add some flavor to the pasta.

In the Orzo we will be adding some Artichokes.

You will also need some chicken broth and some Cherry Peppers. As you can tell I do a lot of my shopping at the Fresh & Easy stores. I know these are local to AZ and Cali. but most of the ingredients can be found in standard grocery stores. If you cannot find these you can also use red peppers.

So while your water boils grab your garlic and shallots.

chop them up!

Also give your artichokes a rough chop.

Get your chicken thighs out also. Remember before you actually start cooking try to get everything out and prepped.

So lets get started. Heat some olive oil in a pan.

Brown up the chicken thighs and let them cook for about 10 minutes on each side.

Remove them from the pan and cover them with some foil to keep them warm. The water should be boiling now so you can add in the Orzo.

Get the shallots and garlic in the pan and get them cooking.

The Orzo cooks up fast so grab what you need to season it. Drain it, return it to the pot and add the dill and artichokes and a splash of olive oil.

Give it a stir and lower the heat and keep it warm.

Grab your cherry peppers and chop them up.

These have a lot of seeds in them, you don't want these in your dish!

Add them in the pan with the chicken broth and wine.

Put the chicken back in and let the sauce reduce.

Serve the chicken on a bed of the orzo and artichoke and pour the sauce over it.

I am so glad I made a double helping of the orzo because it was AMAZING. I really recommend the whole dish but you must must must make the Orzo!
