Favorite Things #31 - Tortilla Pizzas

When I am really hungry but don't feel like doing a complex recipe I tend to gravitate toward this simple dish, tortilla pizza. It is exactly as the name suggests, a pizza made on a tortilla. I make these in my toaster oven all of the time. I don't have to heat up the house and I don't have a lot of dishes to clean after.

The tortilla pizza below is a little more fancy than my usual, with some chicken sausage and sauteed onion, but I usually just make a simple pizza with cheese and turkey pepperoni. They cook in the 425 degree toaster oven in about 5 minutes.

    Quick and easy - it's kind of a cheat dinner but I like popcorn! Another favorite is Tuna Curry in a Hurry. It sounds gross, but the garlic in it makes it super yummy.

  3. I make pizzas very similar, I just cut a pita bread in half and use that as my crust. So simple, yet so good! My other simple favorite is the hot pretzels and cheese :)

  4. I could easily eat pizza every single day and never get sick of it.

    Egg scrambles are usually my quick and easy go to - I bake about 3 or 4 baked potatoes on Sunday for the week - let them cool and stick them in the fridge - easy hash browns on the weekends! :D

  5. Haha, I do the exact same thing, except I make it on naan bread :) But my favorite simple meal is melted cheese, tomato and anchovies on bread. SO good ;)

  6. yesssss! I like doing it on tostada shells b/c they are really easy to eat--pick the whole thing up. The crunch is surprisingly satisfying with the pizza toppings. I do this for quick meals, but I most often just cook some fish in a skillet, either with Tony Chachere's seasoning or with some breadless breading and eat peas & corn on the side. ABout a 5-10 min dinner. Whoop!

  7. This is such a good idea! I usually cook for just myself and if I make a larger pizza I often end up throwing part of it away. Love the single serving idea. What a great way to use up the little bits of things that always accumulate in the fridge.

  9. This is something I mean to make - the tortilla pizza! I never know about this till this year... I keep forgetting it but hopefully next time I buy tortilla, this is a must make recipe!

  10. I used to do the same thing with bagels - but I think tortillas would be more cost-effective! Gonna have to give this a try soon =)
