Gemelli Pasta with Squash, Peas and Basil from Everyday Food

I am really on a pasta kick and this dish turned out looking and tasting great! Summer squash is in season right now so you should be able to get some that is tasty and cheap.








It is quite simple as you can see.




Grab your ingredients. You need pasta, cheese peas, lemon, squash, butter and seasoning. Get that water boiling!




Chop up your squash. Give some to your dogs if you have any, its good for them as it has lots of good fiber.




When your water is boiling...




Drop in your pasta!




Don't forget to reserve some pasta water to make a little sauce action.




When the pasta is almost cooked drop in your squash...




And when that is almost done, drop in your frozen peas.




Get your butter cut up and ready to go. If you can, use real butter, if not use olive oil but don't use PLASTIC butter :)




Stir it all up to combine with the cheese, lemon and herbs. Don't forget to season with salt and pepper too!




Yum!




This is fast, easy and DELICIOUS! The lemon and the cheese give it great flavor with the sweetness of the peas and squash.

    We were want something fast, easy, and yummy to make for dinner tonight, so went ahead and tried this!

    It came out really awesome. I love the fact that it only dirties one pot. XD

    I hate basil, and we didn't have any peas, so we just did without. Had no lemons or lemon juice, so we substituted lemon pepper, and it was really delicious. Used small shell pasta.

    Surprisingly flavorful for such a simple dish, I think the lemon and the parmesian really add something. Planning to continue making this in the future, especially for brown-bagging lunches at work. :) I want to try adding carrots to this next time, maybe some broccoli, I love me some veggies. Could easily stir in some leftover chicken, or maybe italian sausage, for something a little more hearty.

  2. I think that Lemon juice & parm are the best for pasta salads. I do it all the time. Check out my strawberry chicken salad. The dressing was lemon juice. :) happy Sunday

  5. This sounds so good. I'm not that great of a cook but I think I could make this! My hubby and I LOVE pasta and green peas and cheese! What's not to love about this recipe!
