Maple Roast Chicken with Purple Yams

I have been experimenting with some new ingredients recently as I have access to a lot of different markets around my neighborhood. You can make the following with regular yams, but I found some purple yams and gave them a try.




Preheat your oven to 400 degrees and lets get going!




This is pretty simple and has very little prep.




I peeled the yams, this is the first time I have seen these purple yams and thought they were so cute.




Chop them up. Chop your onion as well, mine were already diced up in the fridge.




Toss the yam and onions with the oil, thyme, salt and pepper. Get it into a greased casserole dish or pan.




Pat dry your chicken and season it with salt and pepper.




Put the chicken amongst the veggies and drizzle the maple syrup over it. Pop it in the oven for about an hour.




Use a thermometer to be sure the chicken is done and you are ready to eat!




The star for me were definitely the cute purple yams. I adore sweet and savory foods together so this was perfect for me, and since I eat alone I don't have to please anyone else!

  1. Mark Bittman had a recipe on his blog yesterday for a roast chicken basted with orange juice, honey and cumin. I'll bet that would be good with the sweet potatoes, too. I think that sounds like dinner tomorrow.

  2. I have never seen purple yams either. And I still don't get the difference between a yam and a sweet potato.

    This looks very tasty - just might have to test it out.

  3. Never seen purple yams either. We just bought some sweet potatoes this past weekend... may have to make this meal with those :) MMMMMM

  5. I guess from the picture of the recipe (I am quite the observant one!) that Yams are what we call Sweet Potatoes here, or Sweet Tatties in Scotland vernacular!

    Never seen these pretty purple ones, interesting!

    The chicken looks as if you have used chicken thighs, I find them so much more tasty than chicken breast, and much cheaper.

  7. I will be making this delicious looking treat for dinner tonight.
    The difference between a sweet patatoe and yam, is that the sweet patatoe has a similar color to the rest of the potatoes (russet, coliban, sebago, red, etc) and yams have the bright colored inner flesh. They are also from different botanical families.
