I really like having a vegetarian meal at least once a week. This stir fry is quick and contains one of my favorite things, cashews!
I cut this recipe in half.
Lets gather our ingredients!
You need some Cauliflower, vegetable broth, red curry paste, cashews, soy sauce, green beans and some garlic. You need shallot too, but it didn't make it to the photo shoot.
To toast the cashews heat them in a dry pan or under the broiler for just a few minutes.
Chop up your veggies.
heat up some oil in a wok.
I use one of these dough cutters to scrape things from my cutting board, it makes it so much easier to get things into the pan.
Cook up the shallot and garlic for a couple of minutes, until they are softened.
Stir in the curry and cook for a minute or 2.
Stir in the cauliflower and beans. Add in the soy sauce and veggie broth.
I put the lid on to steam the veggies a bit to soften them, because I am weird and don't like them too crispy.
Once it is done to your liking plate it up and sprinkle the toasted cashews over the top. You could also use peanuts if you don't have cashews on hand.
This is fast, easy and vegetarian friendly.
