Tuna, Black Bean, and Red Pepper Salad

While the rest of the country seems to be enjoying some Fall like weather, Arizona is still feeling the heat. I think we actually got to 105 yesterday. This quick salad filled me up and kept me out of the hot kitchen so I could pretend like maybe it might actually cool off here someday soon.

You don't need much for this salad from the magazine All You, I cut the recipe in half because canned tuna and capers make Tom cringe.

All you need are some beans, I used black beans, red wine vinegar, olive oil, olives, tuna, mustard, red peppers and if you'd like, some capers. You could even add a little bit of finely chopped onion.

There is not much prep involved in this salad. Chop up your peppers and olives and open and drain your tuna.

Mix your vinegar, mustard, salt and pepper.

Stir in the olive oil.

Add in everything else and give it a good stir.

Looks good already! Put it in the fridge for an hour or so to let all the good flavors really permeate the tuna and beans.

Serve it over some lettuce or spinach and you have a tasty lunch or side dish.

  1. It's finally getting to be summertime here but since I moved north, it's cooler than down south but we have humidity which can be a downer. It should be warmer up north... silly upside down country.

    Your salad would make me happy in any season.

  3. This looks freaking awesome - and so low carb!

    I do a similar dish with tuna that's just a teaspoon of red curry paste, a dash of coconut milk, cilantro, red onion, tomato, cucumber and some crushed peanuts.

  4. You can have all this cold weather, I wish I could send it your way...lol! I have to agree with Tom, I'm not a tuna fan. I could substitute chicken (canned) though :) It looks pretty enough too. I do hope it cools down for you.

  5. We had frost on our lawn this morning - it got down to about 35 degrees last night! Love!

  6. When I read the title I was all "ew," but then I saw the photos and I was all "yum!" lol I do like the sound of this and it looks great. We were having cooler temps until today, then it got back up to 90, but that's still better than 105! Whoa Nelly! Do you have pretty mild winters in AZ?

    1. Our winters are wonderful, sunny and warm in the afternoon and just chilly enough for a fire at night. Halloween is usually right when the weather breaks for us.

  10. I could never survive in AZ, my BIL lives there and if he says dry heat one more time. Hot is hot :) Your salad looks so good. I'd love it with the spinach.
