Piquant Boneless Chicken Breast

I cook a lot with chicken because it is always on sale and easy to cook for one person. This is another great recipe from the cookbook, Going Solo in the Kitchen by Jane Doerfer.




I neglected to get the pic of the second page of the recipe but I will step you through it.




Just like the last chicken recipe, it just has a few ingredients that you probably have already. You need some butter, garlic, chicken stock, flour, lemon, mustard powder, half of a chicken breast and some salt and pepper.




Combine the lemon juice and broth. Mine is next to my side dish, some more brussels sprouts. I do love them!




Chop up the garlic.




Measure out some flour and season it with the mustard powder, salt and pepper. The recipe says to shake it in a bag and all that, but this is much easier for me and doesn't waste a bag.




Give the chicken a roll in the flour and seasoning.




Lets get cooking. Melt the butter in a frying pan.




Get the chicken in and brown it up for 4-5 minute or until cooked through. If you hate when recipes say that, the best thing to do is buy a meat thermometer. You can get them cheap and you never have to worry if your meat is done. Get it out of the pan and keep it warm.




Get any excess fat out and drop in the garic. Let this cook for about 30 seconds and stir the whole time.




Pour on the lemon juice and chicken stock and cook for just 30 seconds more. Scrape any yummy bits up off of the bottom of the pan.




Get the chicken on a plate and pour the sauce over it. Super fast and delicious. It was great with my steamed sprouts. I hope you are having a great weekend and enjoying some spring weather!

  5. I really like the idea of mustard powder in the chicken dredge... interesting... mmm love me some spouts too, with lots of butter and salt... ;-)
