Chicken with Peas and Mushrooms

It is the beginning of another week and sometimes the last thing you want to do after a Monday is cook. This meal is so easy to make and so delicious, you might make this your go-to Monday dinner.




Preheat your oven or toaster oven to 400 degrees and lets gather up the ingredients!




You need some chicken thighs and some fresh or dried thyme.




Spray or drizzle with some olive oil to coat the chicken and then season the chicken with some salt, pepper and the thyme. Pop those in the toaster oven on a rimmed baking sheet for 20 minutes.




Notice your dog's reflection in the toaster oven door and remember to save a little chicken for them too.




Grab some frozen peas.




Some sliced mushrooms.




Some shallot OR onion. Slice the shallots up nice and thin.




Toss everyone into a bowl and add some olive oil, salt and pepper.




Pull the chicken out of the oven and pour the veggies on the same roasting pan. Put it all back in the oven for about 20 more minutes. Does it get much easier than that?




This is so simple, so cheap and so delicious. I ended up making the pea and mushroom medley again the next night because I liked it so much. Have a great week!
