Honey-Roasted Cornish Hen

This recipe is from Taste of Home. I love cooking cornish hens, they are the perfect meal for one.

You need a hen, some fresh oregano (or whatever herb you like), lemon, honey, salt and pepper, and some cooking oil. Preheat your oven to 450 degrees and lets get started.

Chop up some fresh herb.

Get it in a bowl with some honey, lemon juice, salt and pepper. I am using my cute Pyrex dots bowl.

Open up your hen and stuff him full of lemon wedges and fresh herbs.

Tie the legs together with some butchers twine, OR embroidery thread like I used. Put it in a pan (on a rack if you have one) and brush it with oil. Put it in the oven then reduce the heat to 350 degrees. Get it in the oven for 35 minutes.

Take it out and give it a brush with the honey/lemon mixture you made earlier. Pop it back in the oven for 10 minutes. Give it another brush and put it back in for the final 10 minutes.

I served it on a bed of brown rice and only ate half. The other half made a delicious sandwich the next day at lunch. Game hens are cheap and so easy to cook, I really recommend you give them a try if you haven't done so yet! Have a great weekend!!
