Garlic Fettuccini with Broiled Grape Tomatoes: A quick weekday meal

I like making quick and easy meals during the week so I was very excited when my sister sent me a ton of flavored pastas. You can find nice fresh or flavored pastas in most grocery stores these days. I really didn't want to hide the flavor of the pasta so I went with something totally simple.


Of course I had to try the Garlic flavored pasta first. I decided to not use sauce so I could really taste the pasta.

Instead I used some of these little gems...


I got my pasta water boiling and then fired up my toaster oven to Broil.


I halved a handful of grape tomatoes and sprinkled them with some kosher salt. I put them on the baking pan for my toaster oven and threw them in for about 4 minutes.


I pulled them out just as they started to collapse.


In another pan I put some olive oil and butter (about a tbs of olive oil and half of butter) on a super low flame just until the butter melted. I got the pasta in the water for just a few minutes and pulled it out and dunked it in the olive oil and butter mix.


Toss it up!


Throw a little grated cheese on top and you are ready to enjoy! So simple but so good!

  1. Nice. i am seriously considering getting a toaster oven. Might come in handy here in louisiana. Do you have a fancy one? Some of them sound complicated. Don't know if I can handle that.

  2. YUM! I was so irritated today because I had to go buy my lunch instead of bringing some from home, but my migraine precluded any cooking last night. Tonight was another matter! I made the wheat pasta, tossed it with a bit of olive oil and butter and some kosher salt and the Parmesan Herb mix and it was awesome. And I forgot all about the parmesan, but I will take that to work tomorrow! And I will try this one sometime too!

  3. I love the idea of the broiled grape tomatoes! Yum. We had polenta tonight. It's 14 freaking degrees right now, and the polenta was stick to our ribs soul food.

  6. this is so healthy! I love this, I didnt know pasta could be so easy. I've been cracking my head on what to prepare everyday and my dad says over night cooked meat is very toxic. So I'm eliminating meat now. But yeah, love your simple delicious meals!
