It took me a long time to adjust and stop burning everything. Quite possibly because the gas ranges were all government-owned and not exactly well-maintained... but also because I learned to cook on electric. I started following you when I googled swimming rama, and you popped up.<br /><br />I got my first gas range 8 years ago, and thought I'd gone to cooking heaven, so I'm really sympathetic to your recent stove situation. I quit burning food and having boil-overs as soon as I got gas. So I'd caution you that heating up takes longer, and so does reducing heat. So yank the pot off the burner if it gets too hot. If you mean that you have induction rather than coil burners, I have heard that it's better than gas.
